Procedure
Combine phase A and phase B separately and heat individually to 95°C with mixing. Maintain temperatures and add phase B to phase A slowly while mixing rapidly. Make sure no water is lost during mixing, as it could affect the clarity of the gel. Add phase C ingredients at around 70°C, followed by phase D, mixing slowly to prevent aeration. Set point is 55-60°C.
