Procedure | |
In main kettle, mix phase A to form a vortex, add Veegum Ultra, mix for 15 minutes. Premix xanthan gum with Liponic EG-1 (phase B). Add slurry to main vessel. Continye mixing at room temperatre for 15 minutes. Heat to 70-75°C with medium speed. In a separate vessel combine phase C, heat to 70-75°C. Slowly add phase C to kettle, continue mixing until a uniform emulsion is formed, scraping sides often. Homogenize batch at 65-70°C, return to propeller mixing, and continue cooling. Add phase D at 45°C, adjust the pH 3.8-4.2, continue mixing. When batch cools to 40°C, stop mixing. Batch sets up overnight and will thicken. | |
